I fibbed...

I didn't really make an Easter cake for today. I did make the chicklets to celebrate Easter. And I did make a cake. But it's an Anniversary cake! Husband's Mom & Dad's anniversary is in 3 days, so I decided to surprise them and do a modern-remake of their wedding cake! The shape is a little different, and the decorations are my interpretation of their cake then, but I'd say it's a similar likeness. 28 I baked two domed/rounded cakes for the top tier, and a regular round layer cake for the bottom tier. They are chocolate cakes with a chocolate filling and hazelnut buttercream, topped with almond fondant and fondant decorations, all in their lovely pink and white color scheme. I even re-created a swan they had on a lower tier (yes, Husband, it's a swan, not a goose, and no, Husband, you may not eat it.) to put as the topper and some simplified versions of the bells they had on their cake.

First, I baked the rounded/domed layers. I filled each layer with the chocolate, then frosted the outside with buttercream frosting. Then I draped each tier with fondant, shaped, and smoothed. Next came the decorations. (The lines on the top tier are covered with crystal sugar.) I painted the color on, rather than coloring the fondant so it wouldn't bleed onto the white. You just made me cry at work! I am still not sure how we were lucky enough to be blessed by you in our family. That husband and family is very lucky.. Me too!! Hope your day was great.
